Sweet Potato Curry

Method

1. Heat the curry paste in a large pan. Then stir in the onion, and cook for 5 minutes, or until softened
2. Add the sweet potaoes, baby potatoes, stock and coconut milk to the pan, and brig to the boil.
3. Reduce the heat, and simmer the curry for roughly 20 minutes, until the potatoes have softened.
4. Add the peas, bring back to the boil, and cook for 2 minutes.
5. serve and enjoy.

Other Notes

• Not suitable for freezing.
• can be served with rice.
