Sweet Potato Curry
Method
- Heat the curry paste in a large pan. Then stir in the onion, and cook for 5 minutes, or until softened
- Add the sweet potaoes, baby potatoes, stock and coconut milk to the pan, and brig to the boil.
- Reduce the heat, and simmer the curry for roughly 20 minutes, until the potatoes have softened.
- Add the peas, bring back to the boil, and cook for 2 minutes.
- serve and enjoy.
Other Notes
- Not suitable for freezing.
- can be served with rice.
